Vegan and Gluten-Free Banana Bread

Banana bread or banana cake comes in many variations, some healthier than others. Here, we choose a healthy, vegan, and gluten-free version! Made without flour and sweetened by ripe bananas and coconut blossom sugar! This way, you can enjoy an extra slice of banana bread and even take one (or two) more without feeling guilty!

Ingredients

  • 250 grams of gluten-free oat flakes
  • 3 (over)ripe bananas, mashed
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 tablespoon vinegar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/3 cup plant-based milk or plant-based oil
  • 1/2 cup coconut blossom sugar
  • pinch of salt
    Optional: nuts or dark chocolate

Preparation

Preheat the oven to 180 degrees Celsius and grease a cake tin well (including the corners and top).

Put the oat flakes in a blender and grind until it becomes a fine powder. Then add all the other ingredients and mix until it forms a homogeneous mass. If you want to add nuts or pieces of dark chocolate, now is the time.

Pour the mixture into the baking tin. Slice the extra banana lengthwise and place it on top. Then put the banana bread in the middle of the oven and bake it for about 35 minutes. Turn off the oven but do not open it.

After ten minutes, you can take the tin out of the oven. Let it cool completely before slicing the bread.
